Mediterranean Chickpea & Feta Salad

This simple, vibrant salad comes together in minutes and is packed with fibre, iron and calcium. Perfect as a light lunch or side, it pairs beautifully with a lean protein for a more substantial meal.

Ingredients

  • 1 tin chickpeas, drained and rinsed

  • 100g cherry tomatoes, halved

  • ½ red onion, thinly sliced

  • ½ cucumber, chopped

  • 60g feta cheese, crumbled

  • 1 tbsp extra virgin olive oil

  • Juice of 1 lemon

  • 1 tbsp fresh parsley, chopped
  • Sea salt and freshly ground black pepper, to taste

Method

  1. In a large bowl, toss together the chickpeas, cherry tomatoes, cucumber, red onion and parsley.
  2. Drizzle with lemon juice and olive oil, then season generously with sea salt and freshly ground black pepper
  3. Just before serving, scatter over the crumbled feta cheese.
