Cod & Chickpea Stew with Spinach

Ingredients

  • 300g cod fillets, cut into chunks

  • 1 can (400g) chickpeas, drained and rinsed

  • 2 cups fresh spinach

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 1 tsp smoked paprika

  • 1 tbsp olive oil

  • 400ml filtered water or fish stock

  • Sea salt + pepper

Method

  1. Heat olive oil, sauté onion and garlic until soft.

  2. Add paprika, chickpeas, and water or stock; simmer for 10 minutes.

  3. Add cod chunks, cook for 5–7 minutes until fish is opaque.

  4. Stir in spinach until wilted. Season to taste.
