- 1 courgette, julienned
- 1 red pepper, sliced
- 2 spring onions, chopped
- 100g shelled edamame beans
- 1 garlic clove, minced
- 1 tbsp organic tamari sauce
- 2 tsp toasted sesame oil
- 1 tbsp sesame seeds
- Salt & black pepper
Method
- Heat 1 tsp sesame oil in a pan; stir-fry beef for 2–3 mins until browned.
- Add garlic, courgette, pepper and edamame; cook for another 3–4 mins, stirring often.

Edamame boosts fibre and plant protein; vitamin C in peppers helps absorb iron from beef; sesame seeds add calcium and healthy fats for hormone support.
