Grass-Fed Beef & Courgette Stir-Fry with Tamari & Sesame

Ingredients

  • 300g organic, grass-fed beef strips

  • 1 courgette, julienned

  • 1 red pepper, sliced

  • 2 spring onions, chopped

  • 100g shelled edamame beans

  • 1 garlic clove, minced

  • 1 tbsp organic tamari sauce

  • 2 tsp toasted sesame oil

  • 1 tbsp sesame seeds

  • Salt & black pepper

Method

  1. Heat 1 tsp sesame oil in a pan; stir-fry beef for 2–3 mins until browned.
  2. Add garlic, courgette, pepper and edamame; cook for another 3–4 mins, stirring often.
  3. Stir in tamari; season to taste.
  4. Finish with the remaining sesame oil, sprinkle over sesame seeds and top with spring onions.

Edamame boosts fibre and plant protein; vitamin C in peppers helps absorb iron from beef; sesame seeds add calcium and healthy fats for hormone support.
