Grounded Greek Salad

A bright, crunchy, and flavourful salad that beautifully balances healthy fats, fibre, and antioxidants. This classic Greek-inspired dish gets a clean, nutrient-dense upgrade—perfect for a light lunch or dinner, and easily adaptable for any season.

Ingredients

  • 4 medium tomatoes, chopped

  • 1 medium cucumber, diced

  • ½ red onion, thinly sliced

  • 100g Kalamata olives, pitted

  • 100g feta cheese, cubed or crumbled

  • 1 tbsp capers

  • 1 tbsp extra virgin olive oil

  • Juice of 1 lemon

  • 1 tsp dried oregano
  • Freshly ground black pepper

Method

  1. In a large bowl, combine the tomatoes, cucumber, red onion, olives and capers.

  2. Gently fold in the cubed or crumbled feta cheese.

  3. In a small bowl, whisk together the olive oil, lemon juice, oregano and black pepper.

  4. Drizzle the dressing over the salad and toss gently to combine.

  5. Serve immediately, or chill briefly if you prefer a cooler salad.
