
Mediterranean Chickpea & Feta Salad
This simple, vibrant salad comes together in minutes and is packed with fibre, iron and calcium. Perfect as a light lunch or side, it pairs beautifully with a lean protein for a more substantial meal.

Ingredients
- 1 tin chickpeas, drained and rinsed
- 100g cherry tomatoes, halved
- ½ red onion, thinly sliced
- ½ cucumber, chopped
- 60g feta cheese, crumbled
- 1 tbsp extra virgin olive oil
- Juice of 1 lemon
- 1 tbsp fresh parsley, chopped
- Sea salt and freshly ground black pepper, to taste
Method
- In a large bowl, toss together the chickpeas, cherry tomatoes, cucumber, red onion and parsley.
- Drizzle with lemon juice and olive oil, then season generously with sea salt and freshly ground black pepper
- Just before serving, scatter over the crumbled feta cheese.
