Ingredients

  • 500g organic pork shoulder, cut into chunks

  • 1 onion, chopped

  • 2 carrots, chopped

  • 1 apple, chopped

  • 1 tbsp apple cider vinegar

  • 1 tsp smoked paprika

  • 1 cup homemade bone broth or filtered water

  • Salt & black pepper

Method

  1. Brown pork in a pan; remove.

  2. Add onion; cook for ~2 mins.

  3. Return pork to the pan, add carrots, apple, vinegar, paprika and broth.

  4. Cover and slow-cook for ~3–4 hours until tender.

  5. Shred pork with two forks; mix back into the sauce before serving.

Apple cider vinegar may support protein digestion and blood sugar balance; apple and carrots add fibre and beta-carotene for skin and immune health; slow cooking preserves collagen.
