Green Detox Broccoli Soup

Alkalising and fibre-rich, this broccoli-based soup supports liver detoxification and hormone balance thanks to sulphur-rich cruciferous vegetables. The vibrant green colour hints at its high chlorophyll content, which may further aid detox and cellular repair. Store in the fridge for up to four days or freeze for up to two months.

Ingredients

  • 1 tbsp olive oil

  • 1 leek or ½ onion, chopped

  • 2 garlic cloves, smashed

  • 1 small head broccoli (approx. 250g), chopped

  • 1 courgette (zucchini), chopped

  • 2 handfuls spinach

  • 1 tbsp fresh lemon juice

  • 720ml (3 cups) vegetable broth or filtered water

  • 1 tbsp hemp seeds (for blending)

  • Salt & cracked black pepper, to taste

Method

  1. In a medium pot, heat olive oil over medium heat. Sauté leek and garlic until soft and fragrant (about 3–4 minutes).

  2. Add broccoli, courgette, and broth. Bring to a simmer and cook for 10–12 minutes, until vegetables are tender.

  3. Add spinach, lemon juice, and hemp seeds. Blend using a stick blender or in a high-speed blender until creamy.

  4. Season to taste. Serve warm with an extra sprinkle of hemp seeds or a swirl of olive oil.

Broccoli + spinach stimulate liver detox pathways (phase I and II), while lemon juice and olive oil help absorb fat-soluble nutrients like vitamins A and K. Hemp seeds contribute plant-based omega-3s and a subtle nutty flavour.
