
Gut-Healing Chicken Bone Broth

Ingredients
- 1 organic whole chicken carcass
- 2 carrots, roughly chopped
- 2 celery stalks, chopped
- 1 onion, quartered (skin on for trace minerals)
- 4 garlic cloves, lightly crushed
- 2 tbsp apple cider vinegar (to help extract minerals from bones)
- 1 small bunch parsley (added at the end)
- 1 tsp salt
- 2.5 litres filtered water
Method
- Add the chicken carcass, vegetables, garlic, vinegar and salt to a large stock pot or slow cooker.
- Cover with filtered water and bring to a gentle boil.
- Reduce to a very low simmer and cook uncovered for 12–24 hours on the hob (or 6–8 hours in a pressure cooker).
- Add the parsley during the final 30 minutes of cooking.
- Strain the broth through a fine mesh sieve and pour into sterilised glass jars.
- Store in the fridge for up to 5 days or freeze for longer shelf life.
The combination of apple cider vinegar and long, slow cooking helps unlock amino acids and minerals from the bones. Garlic contributes natural antimicrobial support and sulphur compounds known to assist detoxification.
